Everyday with Rachel Ray

I feel like they sucked me in, sending me free magazines.  I like it though.  The fun spread on all the recipes in the magazine and the weekly menu.  I don't cook with it often, but I really just enjoy looking through it.  I have tried two breakfast recipes that were really good. 

This is an egg dish where the whites are separated and whipped to a stiff consistency.  Scallions and bacon bits are then folded in.  They bake for a few minutes and then the yolks are added.






I also made a French toast with spices and a blueberry syrup.

Vegetable Obsessions

It seems like I don't just like a vegetable, but instead become borderline obsessed with some of them.  This happens out of nowhere and can linger around for some time.  Usually it is the case of a vegetable I previously hated becoming overwhelmingly delicious.  However, this is not the case any longer and I am just discovering new vegetables (to me) or new varieties of old vegetables.  So currently, it's baby kale and parsnip puree.  First off baby kale is both delicious raw and cooked and is therefore, a must have.  Parsnips on the other hand are truly underrated.  I don't know how it is that I am just having them, but now they are clearly a new found obsession of mine.

Whole Rainbow trout stuffed with herbs and lemon over a bed of kale and shitake mushrooms.
